A Culinary Journey Through Bali’s Natural Landscapes: Chef Gaetan Biesuz and Chef Syrco Bakker Unite for a Two-Event Gastronomic Experience

In an exciting collaboration, Raffles Bali and Syrco BASÈ are set to present a unique culinary experience, bringing together the creative talents of Chef Gaetan Biesuz of Raffles Bali and Chef Syrco Bakker of Syrco BASÈ. This partnership will showcase the rich, diverse flavors of Bali, against the stunning backdrops of Jimbaran Bay and Ubud, Bali's cultural heart.

Rumari, Raffles Bali’s signature fine dining restaurant, offers breathtaking views of Jimbaran Bay. Under the visionary leadership of Chef Gaetan Biesuz, Rumari, meaning "House of the Sun and the Full Moon," emphasizes a deep connection with local farmers and artisans, delivering dishes that reflect Southeast Asia's vibrant culinary traditions. Guided by the 80/20 rule, Rumari’s menu features 80% locally sourced ingredients, ensuring freshness and a strong connection to the Indonesian archipelago.

Syrco BASÈ, Chef Syrco Bakker’s new venture, opened in January 2024, embodies the rich essence of Balinese and wider Asian culinary traditions. Drawing from his experience leading the two-Michelin-starred Pure C in The Netherlands, Chef Syrco brings a multi-sensory dining experience to life, rooted in the principles of Traceability, Nature, and Transparency (TNT). Syrco BASÈ tells the story of the local communities and the natural bounty of Bali, showcasing ingredients with a commitment to sustainability and collaboration.

“This collaboration with Chef Syrco Bakker is an inspiring journey that unites our shared passion for Bali’s diverse flavors,” says Chef Gaetan Biesuz. “Together, we aim to craft a dining experience that not only highlights the purity of local ingredients but also honors the deep connections we have with the land and its people.”

Chef Syrco Bakker adds, “This partnership with Chef Gaetan Biesuz is a thrilling opportunity to merge our culinary philosophies. By drawing on the essence of the sea, ocean, land, jungle, and mountain, we are set to create a truly immersive dining experience that reflects the very soul of Bali.”

The collaboration will feature two exclusive events: on September 9, 2024, at Rumari with the theme “Sea and Ocean,” and on October 4, 2024, at Syrco BASÈ with the theme “Land, Jungle, and Mountain.” The experience is priced at IDR 1,850,000++ per person.
