Grand Hyatt Singapore and acclaimed Dutch chef Sergio Herman have proudly announced the opening of Le Pristine Singapore, a dynamic new restaurant that intertwines food, design, fashion, music, and art to create a truly immersive dining experience. This marks the celebrated chef’s inaugural venture into Southeast Asia, promising to invigorate Singapore’s culinary landscape.
Spanning 650 square meters, Le Pristine boasts a capacity of 114 seats, featuring two intimate dining areas separated by an open kitchen. The restaurant also offers five uniquely designed private dining rooms, catering to both family and business gatherings in a casual fine dining atmosphere. Chef Sergio’s menu pays homage to New Italian cuisine, reflecting his rich Zeeland heritage and the vibrant flavors of Italy.
A Culinary Journey Through Zeeland, Italy, and Singapore
Le Pristine Singapore’s cuisine stands as a contemporary tribute to authentic Italian flavors, deeply influenced by Chef Sergio’s roots in Zeeland, a region celebrated for its pristine waters and exceptional seafood. The menu showcases signature dishes that highlight the essence of New Italian cuisine while incorporating local inspirations from Singapore’s diverse culinary scene.
Guests can anticipate robust flavors and innovative combinations that comfort and surprise the palate. Highlights include the Cannelloni Mussels, featuring tender Zeeland mussels wrapped in delicate pasta, and the Lobster Salad, a delightful blend of fresh lobster, creamy stracchino cheese, cherries, and Vacche Rosse parmesan, balanced with cherry vinaigrette. A standout dish, the Le Pristine Signature Seafood Orecchiette, combines mussel, squid, and langoustine with housemade orecchiette and rich nduja sauce. Exclusively at Le Pristine Singapore, the Pizzette King Chilli Crab features tender Alaskan king crab atop a fluffy mini pizza base, complemented by familiar Singaporean chili crab flavors and a refreshing courgette.
For dessert, the Housemade à la minute Vanilla Ice Cream offers a playful twist, made fresh to order and finished tableside with caramelised pistachios, hazelnuts, and chocolate sauce, evoking nostalgic childhood memories.
A Creative and Stylish Space
Designed by Japanese firm NAO Taniyama & Associates, the former mezza9 space has been transformed into a sleek, moody environment adorned with art from notable Dutch artists like Sabine Marcelis, Maarten Baas, and Rotganzen. The staff is outfitted in stylish uniforms created by Danish-Italian firm OLDER.
Upon entering Le Pristine, guests ascend a sweeping staircase into a warmly illuminated space filled with rich tones and a vibrant atmosphere. An eclectic playlist featuring classic hits from Grace Jones, David Bowie, and the Red Hot Chili Peppers sets a celebratory mood. At the top of the stairs, a chic bar invites patrons to enjoy cocktails, while a dramatic wine tunnel illuminated by red stripes beckons wine enthusiasts to explore a curated selection of 150 labels. The tunnel leads to three of the five private dining rooms, accommodating groups of six to thirteen diners.
