A Night of Unforgettable Dining and Elegance: A Culinary Symphony at The St. Regis Jakarta's J.J.A.

The St. Regis Jakarta, known for its legacy of unparalleled luxury, has once again raised the bar in the culinary world with its Opus One Wine Dinner, hosted at the renowned J.J.A. restaurant. This exclusive event, which took place on Thursday, November 2, 2023, offered a meticulously curated dinner experience that combined modern culinary artistry with timeless dining elegance.


Yvonne Chiong Mougin, the distinguished Export Manager for Opus One Winery for Southeast Asia, Hong Kong, Macau, and Taiwan, graced the evening with her presence. Yvonne, a trailblazer in the wine industry, made history as China's first female sommelier in 2003 and has received accolades from prestigious competitions and worked in renowned establishments.


The Opus One Wine Dinner was a collaborative effort led by Director of Culinary, Chef Oscar Perez, and Chef de Cuisine, Rizky Apriliana. The focus of the evening was on product-driven dishes that celebrated the seasonality of ingredients. Executive Pastry Chef Kevin Lee curated guilt-free desserts to complement the exceptional dining experience.


The carefully crafted menu began with a welcoming glass of Taittinger Champagne Brut Reserve, accompanied by Smoked Oscietra "Sturia" Caviar, egg mousse, cucumber gel, and chives. The dinner continued with Hokkaido Scallops & Duck Foie Gras, served with brown onion & leek cream and rosemary oil, perfectly paired with the 2018 Roserock Chardonnay.


The culinary journey then ventured into the world of Poulet de Bresse, featuring river yabbies and shiitake mushrooms in a cilantro double boiled herbal soup, enhanced with the 2016 Opus One. The main course featured the rich flavors of Yamagata A5 Sirloin, combined with glazed Japanese grapes, red onion potato Pont Neuf, and a tarragon reduction, paired with both the 2017 and 2018 Opus One.


The grand finale was a Peach Composition dessert, a harmonious blend of peach and lime with peach sponge cake, and a refreshing peach-coconut sorbet with fresh mint, complemented by Overture by Opus One. Guests were also treated to St. Regis Praline and had a choice of freshly brewed coffee or tea to round off the exquisite dining experience.
