THREE DISTINGUISHED SOUTHEAST ASIAN CHEFS PREPARE THEIR UNIQUE TAKES ON AUSSIE LAMB
Meat & Livestock Australia (MLA) partnered with the 5-star Hotel Archipelago Group to reintroduce the underrated Australian lamb to Indonesian consumers through the Southeast Asia Six Hands Lambassador event.
Three prominent professional chefs from Southeast Asia, including Indonesia, will present three unique dishes featuring Australian lamb cuts at the Southeast Asia Six Hands Dinner from November 26 through December 3.
Meat & Livestock Australia (MLA) partnered with the 5-star Hotel Archipelago Group to reintroduce the underrated Australian lamb to Indonesian consumers through the Southeast Asia Six Hands Lambassador event, held at The Grove Suites, managed by the Archipelago Group.

Each dish brings out the full flavor of Australian Lamb in different ways. Diners can expect a plethora of flavors and an unparalleled dining experience,” said Berri Naurika, General Manager of The Grove Suites hotel.
The three chefs, A.S. Windoe from Indonesia, Francis Thuan from Vietnam, and Yakup T. from Thailand, will be collaborating to present their unique takes on Australian lamb and showcase their talent, passion, as well as the best methods of cooking lamb itself. This will be the first time the three chefs from the SEA region come and collaborate to promote Australian lamb and engage directly with the customers for greater impact.
The Australian Ambassador to Indonesia, Ms. Penny Williams was also present at the dinner event. Penny joked that her team at the embassy had been calling her the “Lambassador,” mainly for her active role in promoting Australian meat exports, particularly lamb.
She said that her team of hundreds at the embassy also wanted to join the dinner and spoke about how they would cook it in various ways at home. Additionally, she said that she wanted to share the different ways of cooking lamb throughout the event.

The appointment of Chef A.S. Windoe, Corporate Chef for Archipelago (West Area), as Indonesia’s Chef Lambassador reflects his rich experience and expertise in developing local dishes using Australian lamb in the Archipelago Group. His expertise in Australian lamb was built through joining MLA’s workshop and training in Indonesia, as well as a trip to Australia that gave him a better appreciation of Australian lamb from farm to table. In addition, the trip also provided him with the opportunity to exchange ideas with chefs from other countries and create synergy to promote Australian lamb.

During the promotion period, all three menus will be available for dining. Diners can expect lamb dishes prepared in different culinary styles. Crusted Lamb Rack menu a la Chef A.S. Windoe (from Indonesia), while Chef Francis Thuan (from Vietnam) will prepare Lamb Shoulder Rack, and Khao Soi Lamb Shank from Chef Yakup T. (from Thailand).
