Regent Bali Canggu is turning one month into a four-city culinary reunion tour and most of it happens over just three weeks.
Two chefs haven't cooked side by side since one of them was still finding his footing in a Singapore kitchen. Now one leads a restaurant in Bali, the other flies in from across the strait, and for one night only, they're back at the same stove.
That's the kind of story sitting behind Regent Bali Canggu's September 2026 culinary calendar a lineup of four collaborations that moves between Canggu, Jakarta, and Surabaya, built less around single dinners and more around chefs who already know each other's cooking.
What Is Regent Bali Canggu's September 2026 Culinary Calendar?
Regent Bali Canggu, the 150-suite-and-villa beachfront resort on Batu Bolong's coastline, is hosting a series of four chef collaborations throughout September 2026. The lineup runs from 11 to 27 September and spans three restaurants inside the resort Sazón, Chef's Table, and CURE Bali plus two off-site cities, Jakarta and Surabaya. Reservations go through the resort directly, with prices varying by event and available on request.

Sazón Reunites Two Chefs Who Started Their Spanish Cooking Journey Together
It opens on 11 September at 6pm, when Sazón welcomes Chef Carlos Montobbio of Esquina Singapore to cook alongside Chef Andrew Walsh, who now leads Sazón. The pairing isn't random. Walsh's own relationship with Spanish cuisine started during his time at Esquina years ago so this is less a one-off collab dinner and more two former colleagues catching up over fire-cooked, produce-driven Spanish-Mediterranean plates.

Who Is Chef Valentin Fouache, and Why Is He Cooking in Canggu?
The following two nights, 11 and 12 September at 7.30pm, Chef's Table hosts Chef Valentin Fouache, Chef de Cuisine of Duet by David Toutain at The Ritz-Carlton, Bangkok. Fouache trained across a decade of well-regarded French kitchens, and his Canggu menu leans into contemporary French technique built around traceable, seasonal produce think precise plating, restrained flavors, and dishes that let a single ingredient carry the course.
CURE Bali Takes Its Kitchen to Jakarta
Mid-month, the direction flips. On 15 September, a VIP dinner kicks off In Good Taste., a collaboration between Chefs Brendon Chen and Ryan Kim of SU MA and Chef Andrew Walsh and Chef Arvin Tjandra of CURE Bali. It continues in Jakarta on 16 and 17 September. Chen and Walsh crossed paths early in Chen's career Walsh's cooking style shaped how Chen approached the craft. Now they're cooking two menus side by side: SU MA's East Asian plates next to CURE Bali's modern European ones, each restaurant keeping its own identity rather than blending into one shared dish.

Sazón Closes the Month in Surabaya
The calendar wraps 25–27 September at Uppercut Steakhouse inside JW Marriott Surabaya, where Chef Andrew Walsh and Chef Gunartha Tude take over the venue's Across The Table series for a four-hands menu of bold, Latin-leaning flavors Sazón's Bali identity, reintroduced to a new city.
